Made it for dinner tonight for the first time this season. Our cucumbers are the small Persian type, as they never get bitter. I’d planned this a couple weeks ago, so our scallions were snatched from a lowly fate in the compost. So dang good, especially alongside simple broiled salmon. I’ve had surgery on my left hand, so Huz had to chunk the cucumbers and avocado. So dang good, especially on a day that 102.2°.

– pesto to green zhoug (available at ME grocery stores/trader joes has a great one)
– burrata to Greek yogurt dollops
– Aleppo pepper flakes
– toasty bread to fluffy pita

and hoooo my god it was DELICIOUS! In case anyone wants another riff on this classic :)

I made them Tues to serve guests on Wed night & stored them covered in the refrigerator after baking, then brought them to room temperature before serving. Baking time of 18 minutes for the crust was perfect. After adding fruit & filling, I baked 40 minutes, then left them in the oven with the door closed & heat off for an extra 5 minutes, which was also perfect (total of 45 minutes).

Next time, I plan to try using 1/2 as much almond extract in place of vanilla, which sounds good. I may also buy a cherry pitter….

But we found it made three cocktails served over ice. :). I have a double batch in the freezer ready to go for the weekend. I used two—32 ounce jars to leave some room at the top. It froze just fine for me the first time I made it but I didn’t have a mason jar so I used a square Tupperware container so not sure if that had anything to do with it.
